Packed with whole wheat and just a hint of sweetness, this bread did not last long in our house! We love it stuffed with melty cheese in a grilled cheese sandwich, filled with sandwich meat and veggies or chicken salad, or simply toasted with a pad of butter or smear of jam.
This stuff is versatile, delicious and a must-make. Really, you have no excuse.
adapted from King Arthur Flour
1.25 cups water
2 tbsp olive oil
.25 cups honey (or maple syrup)
3.5 cups 100% whole wheat flour
.25 cups mix-ins (nuts, seeds, etc)
*I used a mixture of flax seeds, hemp hearts and sunflower seeds*
1 tbsp vital wheat gluten
1.5 tsp salt
1.5 tsp instead (bread machine) yeast
Place all of the ingredients in the bread pan in the order listed. Program for "dough" and press start.
When finished, roll the dough into a rectangle, and roll to fit inside bread pan. Cover with a cloth and let rise until doubled, about 1.5-2 hours.
Bake in a preheated 375 degree oven for 35 minutes. Brush lightly with butter and sprinkle with oatmeal. Allow to cool in pan, then transfer to cooling rack.
