Of course, I was yet again impressed with the way these turned out, especially since I tried to make my own spice mix and wasn't exactly sure what it was supposed to taste like. David has been on a speculaas kick lately, though, and made a great taste-tester. Also, since we received a fantastic new blender for Christmas, we were able to grind up almonds like pros, and the homemade almond paste was a fun twist.
I had a little trouble getting the dough into the pan (especially since I rolled it out on parchment paper instead of wax and it stuck in the refrigerator) but it all gets mixed up in your stomach in the end, right? Right.
Now that I know to avoid parchment paper and some tweaks to make to the spice mixture (which you could also just buy pre-mixed), I would definitely make it again. The recipe is super simple, and the dough would even be delicious without the almond paste (if you must) for super simple homemade gingerbread-ish cookies.
