4 tbsp coconut flour, scooped and leveled
1/4 tsp baking powder
1/4 tsp baking soda
1/8 tsp salt
1/4 tsp cinnamon
4 eggs (or egg substitute or chia or whatever)
1/2 cup milk of choice
1 tbsp apple cider vinegar
1. In a medium bowl, combine all ingredients and stir well (a small whisk works great here!). Allow the batter to sit 10 minutes to absorb liquid, stirring occasionally.
2. Preheat a large skillet with butter or oil of choice to medium heat.
3. Cook like a pancake. Flip over when the bottom is brown and no longer sticks to the pan.
4. Transfer to a plate, drown in maple syrup and enjoy!
