Tonight, our friend, Chef Aaron Deal, was features as a contestant on the new Food Network show, Guy's Grocery Games. This episode was specifically focused on grilling, so we rounded up some friends and got together for a viewing party to cheer on Aaron. (Who won, by the way. Congrats!!)
Okay, we are always looking for an excuse for a party. And this provided a great theme. We heard through the grapevine that grilled pizzas would be on the menu in the show, so we played along, grilling our own margharita pizza, pepperoni pizza and Thai chicken pizza.
To round out it all out, I brought a dessert pizza that is a spin off on the traditional fruit pizza. In order to make it a bit healthier, I substituted coconut oil for the butter, and used an "icing" of whipped cream and Greek yogurt instead of the traditional cream cheese icing. I dare say that I may have actually liked this version even better. The coconut oil added a very subtle tropical feel, and the whipped topping was airy and sweet and just a touch tangy from the Greek yogurt.
I used the fruits I had on hand, but feel free to substitute anything you like. I topped it with a handful of granola, for crunch, so try that or chopped nuts. Or leave it off entirely!
Cookie Crust Ingredients
1 package snack size sugar cookie mix
1/4 cup soft coconut oil
1 tbsp water
Mix well. Spread dough evenly into an 8x8 glass baking dish. Bake at 350 for 15-18 min or until golden brown.
Allow to cool and the place in refrigerator to chill.
1/2 cup vanilla Greek yogurt
2 cups cool whip, thawed
1/2 green apple
Handful each of blueberries & raspberries
3 strawberries, hulled and sliced
1/8 cup granola or chopped nuts
Gently fold yogurt and cool whip together. Spread over cooled cookie crust.
Arrange sliced fruit across the top, and sprinkle with granola or chopped nuts.
