If we're not using nutritional yeast, what are we using for our chips? Balsamic vinegar. I have discovered that this magical condiment makes pretty much everything better. Plus, when you marinate the chips, the acidity in the vinegar makes them extra crispy and delicious. There's really no "recipe" here, as you can mix it up to your tastes, but definitely pick up some kale the next time you are at the store and get started on this snack!
Balsamic Kale Chips
1 bunch kale
4 tbsp balsamic vinegar
Salt & pepper, to taste
Remove kale leaves from stems and tear into large pieces
Place in a large bowl with vinegar and italian seasoning, use your hands to massage the vinegar into the kale and let the mixture sit for a few hours.
Place kale chips in a single layer on dehydrator trays and sprinkle with salt and pepper.
