These aren't your "typical" chocolate chip cookies - they are thick and fat and full of cookie dough (in fact, they'd be awesome as little balls in a big bowl of ice cream). In fact, they almost resemble a scone more than a cookie. The semantics don't really matter though. What matters is that these babies are incredible. And you should make them. Now.
Dad's Famous Chocolate Chip Cookies
3 7/8 cups flour (4 cups minus 2 tablespoons)
1 teaspoon baking soda
1 teaspoon salt
1 cup butter or margarine, softened
3/4 cup sugar
3/4 cup light brown sugar, packed
1 teaspoon vanilla extract
2 large eggs
1 1/2 cups semi-sweet chocolate chips
1 cup chopped nuts, optional
Preheat oven to 375.
In a medium mixing bowl, combine flour, baking soda and salt - set aside.
In the bowl of an electric mixer cream butter, sugars and vanilla. Add the eggs, beating well until incorporated. With the mixer on low speed, gradually add the flour mixture, blending until a very stiff dough forms. Using a wooden spoon, stir in the chocolate chips and nuts until evenly distributed.
Drop by heaping tablespoons onto ungreased cookie sheets. Bake for 7-10 minutes, or until lightly golden brown on top. Cool on racks.
