One of my favorite new finds at Kroger has been the Taylor Farms Superfood salad, so I used that as an inspiration for my own superfood salad creation. Admittedly, I actually thought I may use the vinaigrette for photos only and to complete the challenge but it was so good that I doused the entire salad in it and am already looking forward to eating it. Like the name suggests, this salad is packed full of healthy ingredients - wasabi, apple cider vinegar and grapefruit help with digestion, while kale and blueberries are full of vitamins antioxidants. A splash of olive oil and a handful of cashews add healthy fats and make vitamins more readily available for your body. Unlike most store bought dressings, this contains absolutely no added sugar or salt.
Healthy foods often get the reputation for being expensive or complicated and time-consuming but this salad is certainly neither one. I put all of the vinaigrette ingredients in a jar that we were recycling anyway, and shook it up, so I didn't even need to dirty my blender, making this a one dish meal. Feel free to add chopped chicken, cucumbers, other vegetables or fresh herbs to personalize your salad.
Super Tasty Superfood Salad with Wasabi Grapefruit Vinaigrette
1 bunch kale, chopped
1/4 cup cashew pieces
1/2 cup fresh blueberries
1 individual cup grapefruit in juice, drained with juice reserved
2 tbsp. olive oil
3 tbsp. apple cider vinegar
1/2 tsp. prepared wasabi
salt & pepper, to taste
Mix chopped kale, cashew, blueberries and grapefruit segments in a large salad bowl.
Pour olive oil, apple cider vinegar and vinegar into a jar, cap and shake vigorously. Alternatively, pour ingredients in a small bowl and whisk until blended, or pour everything into a blender to combine.
Pour vinaigrette over salad and stir to combine. Refrigerate at least 3 hours before serving to allow dressing to soak in to the kale.
