Rachael gave us four different recipes to follow or adapt – Crack Pie, Chocolate & Caramel Tart, Crostata and Double Crust Fruit Pie. When I initially asked David which one he wanted me to make, he chose the chocolate & caramel tart. But…I chickened out and went with crack pie – we had all the ingredients on-hand and I’ll admit, it seemed a little easier. Making caramel intimidates me.
As always, this challenge surprised me. The crack pie is pretty straightforward, so I was skeptical that it would be all that special. As always, I was wrong. Crack pie is like magic. And crack. And magic crack. The oatmeal cookie crust is basically just a simple (though GIATN) oatmeal cookie baked and crumbled but after it is baked under all the filling, it becomes a melt-in-your-mouth masterpiece.
I have full permission from our household to make this again anytime. David wasn’t even sad about his missing chocolate caramel pie.
