This recipe makes a pretty small amount (good for those of us with no self-control!) but it's super easy to double or triple the recipe if you have a bigger family.
2 Tbsp Peanut Butter
2 Tbsp honey
1 cup rolled oats
.25 tsp cinnamon
.25 tsp vanilla extract
Optional add-ins: peanuts, dried fruit, or chocolate chips.
Preheat oven to 325 degrees.
Microwave honey and peanut butter until melted, about 15 seconds. Stir to combine and add vanilla and cinnamon. Add oats and stir until completely covered in mixture.
Spread granola on a baking sheet lined with parchment paper or a silicone baking mat.
Bake 7-8 minutes or until crunchy. Stir and allow to cool at room temperature.
Gently mix in any additions and store in an air-tight container. Recipe yields 4 1/4 cup servings...or 1 big delicious 1 cup serving :)
