We threw a baby shower for her to show her how much we appreciate her and how excited we are to meet baby Nathaniel, whenever it is he arrives. I say, there is no celebrating without sprinkles, or cake, but the cake was already taken care of (by Sam's - side note: their cakes are awesome.), so I made my very favorite snack with a celebratory spin. Cake batter popcorn!
This recipe is super simple, but really delicious and unique. It was a huge hit at the shower and I know I'll make it again for other celebrations. Or maybe a random just-because-it's-Monday-and-I-deserve-it :)
Funfetti Cake Batter Popcorn
6 cups popped popcorn*
spray oil, optional
salt, to taste
1.5 cups white chocolate chips or vanilla bark
1/4 cup coconut oil
1.5 cups white or yellow cake mix
1/3 cup rainbow sprinkles, divided
Pop the popcorn on the stove, or in the microwave.
*My favorite way to do this is by putting plain kernels in a paper lunch bag and microwaving for 2:30-3 minutes. You could also use bagged popcorn or pop kernels over the stove.
If you popcorn is not already buttered and/or salted, spray lightly with oil and sprinkle with salt. Dump popcorn onto baking sheets or into a very large bowl
Melt the white chocolate in the microwave for 30 second intervals, stirring often. Add the oil to the melted chocolate and stir until smooth. Add cake mix. The mixture will be think but should be pourable and well-incorporated.
Pour melted chocolate mixture evenly over popcorn with the sprinkles, and stir to combine. Allow the popcorn to harden at room temperature for about 20 minutes. Sprinkle with more salt, if necessary, and gently break up the large chunks.
