There are a lot of different veggie spiralizers out there, and this one is probably toward the low end of the cost/quality spectrum. It definitely gets the job done but may not hold up for the next 10+ years. I'm okay with that because it was like $14.
This entire meal took about 5 minutes, is full of tons of vitamins, is super low calorie and tasted awesome. It's also a great base for flank steak, chicken or shrimp.
Oodles of Zoodles
1 medium zucchini
1/2 cup diced tomatoes (mine were from a can, drained and rinsed)
Herbs: Rosemary, basil, oregano
EVOO and Balsamic Vinegar
Salt and pepper, to taste
Use Veggetti to cut zucchini into long "zoodles" (I used the "thick" end). Seriously, watch out for your fingers because that thing is sharp.
Dump diced tomatoes on top and sprinkle herbs, cheese (if using) and salt and pepper on top. Drizzle with extra virgin olive oil and balsamic vinegar or balsamic reduction.
