This month, the theme focused on beverages, which is always a challenge for me as my favorite beverages have recently become aspartame-laden diet sodas. As a kid, I hated carbonated beverages and always opted for good 'ol h2o and then...I don't know what happened but I became a diet soda addict. Mountain Dew? Orange Soda? YES PLEASE. I am also a mega fan of lemonade, diet Lipton green tea with citrus and flavored "water." But my all time favorite? Dr. Brown's diet Cream Soda. Luckily (or maybe not?) these things are way too expensive for my taste, so they are a one-in-awhile treat.
That said, I was inspired this month to try my hand at homemade, DIY cream soda. The recipe was adapted from Chocolate Covered Katie and is seriously delicious! I think it would be extra fun as a float with a bit of homemade ice cream :)
1/4 cup warm water
1 tbsp light brown sugar
2-3 tbsp sweetener of choice
1/4 tsp instant yeast
1/2 tsp vanilla extract
1/8 tsp cream of tartar
2 cups of cold water
Empty 1 liter bottle, with cap
1. Dissolve 1 tbsp brown sugar in 1/4 cup warm water and sprinkle yeast on top. Stir gently, cover with a towel and let sit until bubbly, about 10 minutes.
2. Add all other ingredients to a 1 liter bottle and shake well. Stir the yeast/water/sugar mixture and then pour into the bottle. Shake again.
3. Store in a war, dry place for 24-36 hours to let carbonation and flavors develop.
4. Open carefully over a sink, serve over ice or with ice cream!
