When I saw these pancakes on Cara's Cravings, I knew they would be a part of my breakfast line-up, since they are both healthy AND delicious! I think next time they'd also be awesome with a few drops of lemon or lime juice, to pump up the tropical feel.
1/4 cup fat free liquid egg substitute (or 2 egg whites)
1/4 cup (2 oz.) low or non-fat cottage cheese
1/4 teaspoon coconut extract
1/4 cup plain oats
1/4 teaspoon baking powder
1 packet of Splenda or other sweetener
2 large strawberries, thinly sliced
1 tablespoon shredded coconut
Preheat a nonstick griddle over medium heat.
Combine all ingredients (except the strawberries and coconut) in a blender and process until smooth.
Spray the griddle with nonstick spray. Pour the batter into the hot skillet, forming 2 large pancakes. Arrange the sliced strawberries and shredded coconut on top of the pancakes. Cook until tops are bubbly and the bottoms are lightly browned, about 5 minutes. Flip and cook 2-3 minutes on the other side.
Serve hot and top with cool whip!
