For this very reason, I had no intention of sharing this meal. It sounds disgusting and doesn't look much better - but it tastes amazing. I ate about 90% of it before finally giving in and snapping a picture, and I think the crappy picture just add to its character.
Because I was on my a-game this morning, I had an awesome green smoothie (with pumpkin, cinnamon, coconut oil, maple syrup, almond milk, vanilla extract and ice) for breakfast. And then I had a cup of coffee or two. Because I was freezing. Just before heading to the gym for my lunchtime class, though, I went ahead and made lunch to take with me so I wouldn't be tempted to spend a lot of money while I was out for the day.
So, I'm here to tell you the secret of my turkey jelly omlette crepe. Don't laugh.
3 large eggs
2 oz. shaved turkey lunchmeat (or ham or any other meat)
1 Tbsp. Grape or Strawberry Jelly
Crack eggs and whisk. Pour into a medium-sized nonstick (or add oil of choice) sautee pan over medium-high heat.
Cook the eggs until bubbles begin to appear, just as you would with a pancake. Using a spatula, pick the crepe up and place it on a plate.
Place a spoonful of jelly on top of eggs and spread around (this will be easier as it warms up).
Place slices of turkey on top of jelly (add cheese or other ingredients, to taste). Fold the entire thing in thirds, securing with a toothpick.
Refrigerate for later or gobble it up!
