I am obsessed with Canella Vita's chocolate ganache recipe and it travels better than cupcakes with big tall frosting, so I used that (with sprinkles, of course. No birthday is complete without sprinkles.) and racked my brain for a "stuffing" to go inside. A cream cheese based filling seemed like it may overwhelm the complex flavors, so after much searching through the kitchen, I decided on marshmallow fluff. Somehow this ended up giving me varying results in the different cupcakes, but overall, I think it was a good decision, since the flavor is so light.
Without further ado, below is the recipe, adapted from David Lieberman's Chocolate Stout Cupcakes.
3/4 cup unsweetened cocoa
2 cups sugar
2 cups all-purpose flour
1 teaspoon baking soda
Pinch of salt
1 bottle stout beer
1 stick butter, melted
1 tablespoon vanilla extract
3 large eggs
3/4 cup sour cream
Preheat oven to 350 degrees F.
In a large mixing bowl, whisk together the cocoa, sugar, flour, baking soda, and salt.
In another medium mixing bowl, combine the beer, melted butter, and vanilla. Beat in eggs, 1 at time. Mix in sour cream until thoroughly combined and smooth. Gradually mix the dry ingredients into the wet mixture.
Lightly grease or line 24 muffin tins. Divide the batter equally between muffin tins, filling each 3/4 full. Bake for about 12 minutes and then rotate the pans. Bake another 12 to 13 minutes until risen, nicely domed, and set in the middle but still soft and tender. Cool before turning out.
Core each cooled cupcake and fill with roughly 1 tbsp of marshmallow fluff. To core, cut a circular hole on the top of each cake and slice off the cake, leaving only a "lid" for the hole. Replace lid after the cupcake has been filled.
Using the following ganache recipe (from Canella Vita) to top each cupcake.
2 cups semisweet chocolate chips
1 stick (8 tablespoons) butter
4 tablespoons corn syrup
2 tablespoons water
Melt all ingredients in pot over low heat on the stove--stirring constantly--or in bowl in microwave. Pour over cooled cake. While still warm, sprinkle each cupcake with sprinkles. Sprinkles are birthday magic.
