My family is big on beer and had been munching on a jalapeno cheddar demi loaf while I was visiting, so I merged their two loaves and baked up a little Cheddar Jalapeno Beer Bread. We had a few ounces of bacon bits left in a bag and were headed out of town, so I tossed them in, too (because bacon makes everything better, right?). The beauty of this recipe, though, is that it is amazing as-in but is also incredibly customizable, so make it and make it your own!
Makes one 9-inch loaf
3 cups all purpose flour
1 tablespoon baking powder
1 teaspoon salt
3 tablespoons sugar
1 1/2 cups cheddar, cubed
1 jalapeno, sliced and seeds removed
12 ounces good quality beer (I used Terrapin)
1/2 cup butter, melted
Optional: Other ingredients (I threw in some bacon bits)
Preheat your oven to 350 degrees.
In a large bowl, mix together the flour, baking powder, salt, and sugar. Add in the cubed cheese and sliced jalapeno as well as any other ingredients. Pour in the beer and stir until combined.
Pour half of the melted butter in a 9-inch loaf pan. Spoon the batter in the pan and pour the remaining butter on top. Place in the oven and bake for 50-60 minutes until the crust is golden brown.
Remove from the pan and serve immediately.
